Ingredients:
1 can rotel
1 can diced tomatoes
1/2 to 1 whole onion
cilantro
dash of lime and salt
1/2 jalpeno, more if you like it REALLY hot.
Place in blender, blend to consistency you like, we usually like a few chunks but this time it was smooth
I like my salsa warm. So I then cook for about 5 mins, I dont want the onions to cook throughly though, so not too long, but this is very yummy! and quick!

You can actually can that and use it later on. I did that before and used it over pasta etc.. Yum! Looks great!
Ive wanted to and give as gifts but I read about it and it looks like if not done right I could poison people:( scary
Yea, you definitely have to make sure it seals right. I love infused oils, but some can get bacteria, especially if using raw garlic. Why can't anything be simple?
